Ingredients:
1 Cups of rice
1 Red Pepper medium size
1 Chicken Stock
1 large Onion chopped
1 cup of Peas
2 Carrots diced
1 cup of Orange Juice
1 tbsp Corn Oil
1 tbsp Curry
Salt
How to prepare:
Wash rice well under running water and drain.
In a medium deep pan, heat oil over medium-high heat. Stir in onion until its color is yellow. Add peas, carrots and pepper stirring frequently for 2-3 minutes. Add rice and stir for 1 minute.
In a large cup, put orange juice, add curry and salt and stir until all dissolved. Make sure that salt is enough to neutralize the sweet taste of orange juice. You can add more curry if you want.
Pour orange juice mixture over rice, add stock and 1 cup of boiling water and stir until liquids are almost absorbed.
Cover pan, move to low heat, and leave to cook for about 20-25 minutes.
