Serve next to Koki Grilled Chicken Meal
Ingredients:
1 Pack of artichoke
½ Head of lettuce
1 Red Onion
2 tbsp lemon juice
1/3 Olive oil
½ tbsp Mustard
½ cup Black olives sliced
Salt and Pepper
1 Garlic crushed
1 cup cherry tomatoes
5 slices of toast
How to prepare:
Snipe the leaves from lettuce head. Line the small inner ones in a flower shape in a serving plate. Shred the rest of leaves and add to salad plate.
Line the small inner leaves of the lettuce head in a flower shape in a serving plate. Cut remaining leaves into large pieces.
Cut the edges off toast or bread. Cut the white parts into cubes. In a skillet, heat 1 tbsp oil over medium heat. Add bread cubes and stir constantly until bread turns golden. You can toast bread in oven or toaster instead.
In a small bowl, mix garlic, mustard, lemon juice, oil, salt and pepper. Stir to mix dressing well.
In a large bowl, mix artichokes, tomatoes, onions and lettuce. Add all ingredients over lettuce leaves in serving plate. Pour dressing on top just before serving.
